- 1–½ cups fresh apple cider
- 4 tablespoons cold unsalted butter
- 2 large eggs
- 1/3 cup granulated sugar
- ½ cup brown sugar
- 1/3 cup light olive oil
- ¼ cup sour cream
- 1–½ teaspoons baking powder
- 1 teaspoon ground cinnamon
- 1–¾ cups all-purpose flour
Instructions
- Preheat your oven to 350°F (175°C). Grease a 9” square baking dish and line it with parchment paper.
- In a large sauté pan, boil the apple cider until reduced by half (about 5 minutes). Add the diced butter and whisk until melted.
- In a medium bowl, combine eggs, sugars, olive oil, sour cream, baking powder, cinnamon, and salt. Gradually whisk in the boiled cider mixture.
- Stir in the flour until just combined.
- Pour the batter into the prepared baking dish and bake for 22-25 minutes or until golden.
- Cool slightly on a rack before brushing melted butter on top and sprinkling with cinnamon sugar.
