  • 1½ cups fresh apple cider
  • 4 tablespoons cold unsalted butter
  • 2 large eggs
  • 1/3 cup granulated sugar
  • ½ cup brown sugar
  • 1/3 cup light olive oil
  • ¼ cup sour cream
  • 1½ teaspoons baking powder
  • 1 teaspoon ground cinnamon
  • 1¾ cups all-purpose flour

Instructions

  1. Preheat your oven to 350°F (175°C). Grease a 9” square baking dish and line it with parchment paper.
  2. In a large sauté pan, boil the apple cider until reduced by half (about 5 minutes). Add the diced butter and whisk until melted.
  3. In a medium bowl, combine eggs, sugars, olive oil, sour cream, baking powder, cinnamon, and salt. Gradually whisk in the boiled cider mixture.
  4. Stir in the flour until just combined.
  5. Pour the batter into the prepared baking dish and bake for 22-25 minutes or until golden.
  6. Cool slightly on a rack before brushing melted butter on top and sprinkling with cinnamon sugar.
