  • 1/3 cup unsweetened plain plant-based yogurt
  • 3 tbsp apple butter
  • 3 tbsp chia seeds
  • 2 apples, diced
  • 3 tbsp gluten-free rolled oats
  • 2 medjool dates
  • 1 tsp vanilla extract
  • 1 tsp cinnamon
  • 1/4 tsp cardamom
  • 1/4 tsp kosher salt or more to taste
  • 3/4 cup soy milk
  • 3 tbsp walnuts or pecans
  • 2 tsp maple syrup

Instructions

  1. In a blender, combine yogurt, apple butter, date, vanilla extract, cinnamon, cardamom, salt, and soy milk. Blend until smooth.
  2. In a bowl, mix chia seeds with the blended mixture. Let sit for 5 minutes before whisking again to break up clumps. Refrigerate for at least an hour.
  3. For the crumble topping, pulse oats, walnuts (or pecans), and dates in a mini food processor until crumbly.
  4. In a sauté pan over medium-low heat, cook diced apples with maple syrup and cinnamon until softened.
  5. Layer the chia pudding into jars or bowls and top with stewed apples and crumble.
