- 1/3 cup unsweetened plain plant-based yogurt
- 3 tbsp apple butter
- 3 tbsp chia seeds
- 2 apples, diced
- 3 tbsp gluten-free rolled oats
- 2 medjool dates
- 1 tsp vanilla extract
- 1 tsp cinnamon
- 1/4 tsp cardamom
- 1/4 tsp kosher salt or more to taste
- 3/4 cup soy milk
- 3 tbsp walnuts or pecans
- 2 tsp maple syrup
Instructions
- In a blender, combine yogurt, apple butter, date, vanilla extract, cinnamon, cardamom, salt, and soy milk. Blend until smooth.
- In a bowl, mix chia seeds with the blended mixture. Let sit for 5 minutes before whisking again to break up clumps. Refrigerate for at least an hour.
- For the crumble topping, pulse oats, walnuts (or pecans), and dates in a mini food processor until crumbly.
- In a sauté pan over medium-low heat, cook diced apples with maple syrup and cinnamon until softened.
- Layer the chia pudding into jars or bowls and top with stewed apples and crumble.
