Ingredients
- 2.5 lbs beef short ribs (bone-in)
- Salt and freshly ground black pepper
- 2 tablespoons olive oil
- 1 large onion, chopped
- 2 carrots, chopped
- 2 celery stalks, chopped
- 4 cloves garlic, minced
- 2 tablespoons tomato paste
- 2 cups apple vinegar
- 2 cups beef broth
- 2 sprigs fresh thyme
- 2 bay leaves
- 2 lbs Yukon gold potatoes, peeled and cubed
- 4 tablespoons unsalted butter
Instructions
- Prepare all ingredients by chopping vegetables and cubing potatoes.
- Season short ribs with salt and pepper. Heat olive oil in a large Dutch oven over medium-high heat. Sear the beef on all sides until browned (about 3-4 minutes per side). Remove from pot and set aside.
- In the same pot, sauté onions, carrots, celery, and garlic for about 5 minutes until softened. Stir in tomato paste and cook for another minute.
- Deglaze pot with apple vinegar, scraping up any browned bits; simmer for about 2 minutes.
- Return short ribs to pot and add beef broth along with thyme and bay leaves. Bring to a simmer, cover, reduce heat to low, and let braise for 2-3 hours until tender.
- Meanwhile, boil cubed potatoes in salted water until tender (about 15 minutes). Drain and return to pot; add butter and mash until smooth.
- Serve hot short ribs over buttery mashed potatoes.
