  • 2.5 lbs beef short ribs (bone-in)
  • Salt and freshly ground black pepper
  • 2 tablespoons olive oil
  • 1 large onion, chopped
  • 2 carrots, chopped
  • 2 celery stalks, chopped
  • 4 cloves garlic, minced
  • 2 tablespoons tomato paste
  • 2 cups apple vinegar
  • 2 cups beef broth
  • 2 sprigs fresh thyme
  • 2 bay leaves
  • 2 lbs Yukon gold potatoes, peeled and cubed
  • 4 tablespoons unsalted butter

Instructions

  1. Prepare all ingredients by chopping vegetables and cubing potatoes.
  2. Season short ribs with salt and pepper. Heat olive oil in a large Dutch oven over medium-high heat. Sear the beef on all sides until browned (about 3-4 minutes per side). Remove from pot and set aside.
  3. In the same pot, sauté onions, carrots, celery, and garlic for about 5 minutes until softened. Stir in tomato paste and cook for another minute.
  4. Deglaze pot with apple vinegar, scraping up any browned bits; simmer for about 2 minutes.
  5. Return short ribs to pot and add beef broth along with thyme and bay leaves. Bring to a simmer, cover, reduce heat to low, and let braise for 2-3 hours until tender.
  6. Meanwhile, boil cubed potatoes in salted water until tender (about 15 minutes). Drain and return to pot; add butter and mash until smooth.
  7. Serve hot short ribs over buttery mashed potatoes.
