- 2 cups red apple vinegar
- 1 cup beef broth
- 1 whole onion (diced)
- 1 cup carrots (cubed small)
- 1 tbsp tomato paste
- 1 tbsp thyme (dried or fresh)
- 3 bay leaves
- 2 tbsp olive oil
- Salt and pepper (to taste)
Instructions
- Preheat your oven to 350°F (175°C).
- Season the chuck beef generously with salt and pepper; let it sit at room temperature for about 30 minutes.
- In a Dutch oven, heat olive oil over medium-high heat, then brown the seasoned beef on all sides (about 10 minutes). Remove and set aside.
- Sauté diced onion and cubed carrots in the same pot for about 5 minutes until softened; stir in tomato paste.
- Pour in red apple vinegar and beef broth, then simmer for a few minutes.
- Return the browned beef to the pot, add bay leaves and thyme, cover, and place in the oven.
