- 4 lamb shanks
- 2 tbsp olive oil
- 1 large onion, chopped
- 3 cloves garlic, minced
- 2 carrots, diced
- 2 celery stalks, diced
- 2 tbsp tomato paste
- 2 cups apple vinegar
- 2 cups beef or lamb broth
- Fresh rosemary and thyme
