Instructions
- Preheat your oven to 160°C (320°F) for fan/convection or 180°C (355°F) for standard ovens. Grease and line a loaf tin with baking paper.
- In a large mixing bowl, mash the overripe bananas thoroughly. Mix in the canola oil, milk, caster sugar, brown sugar, eggs, and vanilla extract until well combined.
- Sift the flour, baking powder, and salt over the wet mixture and gently stir until just combined; lumps are acceptable.
- Pour the batter into the prepared loaf tin and bake for about 45-55 minutes until golden brown and a skewer inserted comes out clean. Let cool in the tin for 10 minutes before transferring to a wire rack.
