  • ½ cup canola oil
  • ½ cup milk
  • ½ cup caster sugar
  • ½ cup brown sugar
  • 2 large eggs

  • 1 ½ cups plain flour
  • 2 teaspoons baking powder
  • ½ teaspoon salt

Instructions

  1. Preheat your oven to 160°C (320°F) for fan/convection or 180°C (355°F) for standard ovens. Grease and line a loaf tin with baking paper.
  2. In a large mixing bowl, mash the overripe bananas thoroughly. Mix in the canola oil, milk, caster sugar, brown sugar, eggs, and vanilla extract until well combined.
  3. Sift the flour, baking powder, and salt over the wet mixture and gently stir until just combined; lumps are acceptable.
  4. Pour the batter into the prepared loaf tin and bake for about 45-55 minutes until golden brown and a skewer inserted comes out clean. Let cool in the tin for 10 minutes before transferring to a wire rack.
