  • 3 to 4 lb ripe organic tomatoes, cut into wedges
  • 2 bulbs garlic
  • 1/2 onion, diced
  • 1 tbsp extra-virgin olive oil
  • 1 1/2 cups organic heavy cream
  • 2 cups organic vegetable broth
  • 4 tbsp organic tomato paste
  • 1 tsp sea salt, plus more as needed
  • 1 tsp all-purpose seasoning blend
  • 1/2 tsp smoked paprika

Instructions

  1. Preheat the oven to 400°F (200°C). Spread tomato wedges on a baking sheet and wrap garlic (cut tops off) in foil with olive oil. Roast both for approximately 20 minutes.
  2. In a large pot over medium heat, sauté diced onions in olive oil until translucent (about 5 minutes).
  3. Remove roasted garlic from the oven and squeeze into the pot along with roasted tomatoes and their juices.
  4. Pour in vegetable broth and bring to a simmer. Blend until smooth using an immersion blender or regular blender.
  5. Stir in heavy cream, tomato paste, sea salt, seasoning blend, and smoked paprika. Heat through without boiling; adjust seasoning as needed.
  6. Serve hot, garnished with reserved roasted tomatoes if desired.
