  • 1/2 cup packed light or dark brown sugar
  • 1/2 cup granulated sugar
  • 2 large eggs, room temperature
  • 1/4 cup unsweetened applesauce
  • 2 tsp vanilla extract
  • 1 1/2 cups grated zucchini
  • Optional: 1 cup semi-sweet chocolate chips, chopped nuts, raisins, or similar

Instructions

  1. Preheat the oven to 350°F (175°C) and grease a loaf pan.
  2. In a large bowl, whisk together flour, baking powder, baking soda, salt, cinnamon, and nutmeg until well blended.
  3. In another bowl, mix oil, brown sugar, granulated sugar, eggs, applesauce, and vanilla extract until smooth.
  4. Gradually combine the wet ingredients with the dry ingredients; stir gently until just combined. Fold in grated zucchini.
  5. If desired, add chocolate chips or nuts and gently fold into the batter.
  6. Pour batter into the prepared loaf pan and bake for about 55 minutes or until a toothpick inserted comes out clean.
  7. Let cool in the pan for about 10 minutes before transferring to a wire rack.
