Ingredients
- 250 g softened butter
- 250 g caster sugar
- 1 teaspoon vanilla extract
- 4 medium eggs
- 250 g self-raising flour
- 3 tablespoons milk
- Zest of 1 orange
- 200 g icing sugar
- 2 tablespoons freshly squeezed orange juice
- 1–2 tablespoons orange zest
Instructions
- Preheat your oven to 180°C (160°C for fan ovens) and line an 8×10-inch baking tin with baking paper.
- In a large mixing bowl, whisk the softened butter and caster sugar until light and fluffy. Add the vanilla extract.
- Gradually mix in the eggs, one at a time, then fold in the self-raising flour and milk until smooth. Stir in the orange zest.
- Pour the batter into the prepared tin and bake for 25-30 minutes or until a toothpick inserted comes out clean.
- Allow to cool in the tin for 10 minutes before transferring to a wire rack.
