  • 1 cup granulated sugar
  • 1/2 cup packed brown sugar
  • 2 large eggs
  • 1/2 cup vegetable oil
  • 8 oz cream cheese
  • 1 tablespoon vanilla extract
  • 1/4 cup granulated sugar (for cream cheese swirl)
  • 1 large egg yolk (for cream cheese swirl)
  • 2 teaspoons vanilla extract (for cream cheese swirl)

Instructions

  1. Preheat your oven to 375°F (190°C) and line a muffin pan with paper baking cups.
  2. In a medium bowl, whisk together flour, pumpkin spice, baking soda, and salt; set aside.
  3. In a large bowl, mix pumpkin puree, granulated sugar, brown sugar, eggs, vegetable oil, and vanilla until well combined. Gradually add dry ingredients until no lumps remain.
  4. In another bowl, beat cream cheese with sugar, egg yolk, and vanilla until smooth.
  5. Fill each muffin cup about three-quarters full with batter; add one tablespoon of cream cheese mixture on top and swirl using a toothpick.
  6. Bake for 18 to 20 minutes or until a toothpick inserted comes out clean with a few crumbs attached. Allow to cool for at least 10 minutes before serving.
