  • 1 ½ cups chocolate cookie crumbs
  • ¼ cup unsalted butter, melted
  • 2 tbsp granulated sugar
  • 16 oz cream cheese, softened
  • ½ cup granulated sugar
  • 2 large eggs
  • 1 tsp vanilla extract
  • ¼ cup sour cream
  • Pinch of salt
  • 1 can (21 oz) cherry pie filling
  • Optional: dark chocolate shavings or curls for garnish
  • Optional: whipped cream for serving

Instructions

  1. Preheat your oven to 325°F (160°C).
  2. Line a 9×9 inch baking pan with parchment paper.
  3. In a bowl, mix chocolate cookie crumbs with melted butter and granulated sugar; press into the bottom of the pan.
  4. Beat cream cheese until smooth; gradually add granulated sugar, then add eggs one at a time, mixing well after each addition.
  5. Stir in vanilla extract, sour cream, and a pinch of salt until well combined; pour over the crust.
  6. Bake for 30–35 minutes until set but slightly jiggly in the center; cool completely.
  7. Top with cherry pie filling before slicing into squares.
