Blackened Shrimp Salad is a vibrant, refreshing dish that combines the bold flavors of blackened shrimp with the creamy tang of feta, briny kalamata olives, and tender artichoke hearts. Perfect for summer gatherings or a light lunch, this salad is not just satisfying but also a feast for the eyes with its colorful ingredients.

Ingredients

Scale
  • 1 pound large shrimp (peeled, deveined)
  • 3 tablespoons red wine vinegar
  • 3 tablespoons crumbled feta
  • Juice of ½1 lemon
  • 23 teaspoons blackening seasoning
  • 8 cups chopped romaine lettuce
  • ½ cup marinated artichoke hearts
  • ¼ cup kalamata olives

Instructions

  1. Prepare the vinaigrette by whisking together red wine vinegar, crumbled feta, lemon juice, minced garlic, dried oregano, salt, pepper, and olive oil in a bowl. Set aside.
  2. Cut tomatoes into wedges and marinate them in a small bowl with some vinaigrette.
  3. Season the shrimp with blackening seasoning in a large bowl.
  4. Cook shrimp in a hot skillet with olive oil for about 1–2 minutes on each side until pink and curled.
  5. Assemble your salad by layering romaine lettuce topped with artichokes, feta cheese, olives, marinated tomatoes, and blackened shrimp. Drizzle with remaining vinaigrette before serving.
