  • 2 packages (6 ounces each) Driscolls Raspberries
  • 1/2 cup sugar
  • 1 teaspoon vanilla extract
  • 1/4 cup orange juice
  • 2 slices sourdough or French bread
  • 2 tablespoons mayonnaise
  • 2 ounces brie cheese (about 4 tablespoons)
  • 4 slices manchego cheese, white cheddar cheese, or provolone cheese

Instructions

  1. Prepare the Raspberry Compote: In a small saucepan over medium heat, combine raspberries, sugar, vanilla extract, and orange juice. Cook until boiling for about 5 minutes. Reduce heat and simmer for another 15-20 minutes until thickened. Let cool.
  2. Assemble Your Sandwich: Spread mayonnaise on one side of each slice of bread. On one slice (mayonnaise side down), layer brie and raspberry compote, followed by the manchego cheese. Top with the second slice of bread (mayonnaise side up).
  3. Grill: Heat a non-stick skillet over medium heat and place the assembled sandwich in the skillet. Grill for approximately 3-4 minutes per side until golden brown and cheese is melted.
