  • 1 heaping tablespoon sugar-free peanut butter
  • 1 large extra-large egg
  • 2 teaspoons cocoa powder
  • 2 teaspoons monkfruit sweetener (optional)
  • Pinch of salt
  • 1 1/2 tablespoons sugar-free semi-sweet chocolate chips (divided)
  • 12 teaspoons water as needed

Instructions

  1. In a mixing bowl, combine peanut butter, egg, cocoa powder, salt, sweetener, and 1 tablespoon of chocolate chips. Mix well.
  2. If necessary, add water gradually until reaching desired consistency.
  3. Preheat your mini waffle maker according to manufacturer instructions.
  4. Pour half of the batter into the preheated waffle maker and sprinkle with half of the remaining chocolate chips. Cook until no steam is visible (about 2-3 minutes).
  5. Carefully remove and repeat with remaining batter to create another waffle.
