  • 2 tablespoons extra virgin olive oil
  • 1 packet dry ranch seasoning mix
  • 8 Russet potatoes (about 4 pounds)
  • 2 pounds boneless, skinless chicken breasts
  • 1 cup shredded mild cheddar cheese
  • 1 cup shredded Monterey Jack cheese
  • crumbled turkey bacon (optional)
  • chopped green onions (for garnish)

Instructions

  1. Preheat your oven to 425°F and line a large sheet pan with parchment paper.
  2. In a mixing bowl, combine diced potatoes with olive oil, buffalo sauce, ranch seasoning mix, and black pepper. Toss until well-coated.
  3. Spread seasoned potatoes on the sheet pan and roast for about 30 minutes until golden brown and tender.
  4. While potatoes roast, season chicken pieces and cook over medium heat until no longer pink (about 7-10 minutes).
  5. Once the potatoes are roasted, layer cooked chicken on top, sprinkle cheeses and crumbled turkey bacon if using.
  6. Return to the oven and bake for an additional 15-20 minutes until cheese is melted and bubbly.
  7. Garnish with chopped green onions and serve hot with sour cream and extra buffalo sauce on the side.
