  • 2 pounds butternut squash
  • 2 Honeycrisp apples
  • Olive oil
  • Salt
  • Black pepper
  • 2 tablespoons maple syrup
  • 1/2 teaspoon dried sage
  • 1 1/2 teaspoons Herbes de Provence
  • 2 small fennel bulbs
  • 1 onion
  • 1 cup grated Gruyere cheese

Instructions

  1. Preheat the oven to 425°F.
  2. In a large bowl, toss cubed butternut squash and apples with olive oil, salt, pepper, maple syrup, dried sage, and Herbes de Provence until evenly coated.
  3. Spread the mixture on a baking sheet lined with foil. Roast for about 35 minutes until tender.
  4. While roasting, heat olive oil in a skillet over medium-high heat; cook crumbled sausage until browned. Remove from the pan.
  5. In the same skillet, caramelize sliced fennel and onion for about 10–12 minutes until golden brown; combine with sausage in a bowl.
  6. Once veggies are roasted, switch the oven to broil. Combine roasted squash mixture with sausage and fennel; transfer to a baking dish.
  7. Drizzle remaining maple syrup over the top and sprinkle with Gruyere cheese.
  8. Broil for several minutes until cheese is melted and golden.
  9. Garnish with fresh sage leaves before serving warm.
