  • 2 large boneless skinless chicken breasts
  • 1 ½ cups chicken broth
  • ¾ cup heavy cream (or half-and-half)
  • 3 tablespoons butter
  • 2 teaspoons Cajun seasoning
  • 3 cloves garlic (minced)
  • 10 oz. Rotel diced tomatoes with green chilies
  • 1 tablespoon honey
  • 2 teaspoons hot sauce
  • 1 teaspoon brown sugar
  • 1 teaspoon mustard powder
  • 1 teaspoon oregano
  • 1 pinch cayenne pepper
  • 1 pinch red pepper flakes
  • 12 tablespoons olive oil (or avocado oil)
  • 3 tablespoons flour
  • 2 teaspoons lime juice
  • ¾ cup cheddar jack cheese (shredded)
  • Lime wedges
  • Fresh cilantro (roughly chopped)

Instructions

  1. Season chicken breasts with Cajun seasoning and dredge in flour.
  2. In a skillet, heat olive oil over medium-high heat. Cook chicken until golden brown, about 6-7 minutes per side. Set aside.
  3. In the same skillet, melt butter and sauté garlic until fragrant. Add chicken broth, heavy cream, honey, hot sauce, brown sugar, mustard powder, oregano, cayenne pepper, and red pepper flakes; stir well.
  4. Incorporate diced tomatoes into the sauce and return the chicken to the skillet. Let simmer for about 5 minutes until heated through.
  5. Stir in lime juice and top with shredded cheese until melted.
