- 2 large boneless skinless chicken breasts
- 1 ½ cups chicken broth
- ¾ cup heavy cream (or half-and-half)
- 3 tablespoons butter
- 2 teaspoons Cajun seasoning
- 3 cloves garlic (minced)
- 10 oz. Rotel diced tomatoes with green chilies
- 1 tablespoon honey
- 2 teaspoons hot sauce
- 1 teaspoon brown sugar
- 1 teaspoon mustard powder
- 1 teaspoon oregano
- 1 pinch cayenne pepper
- 1 pinch red pepper flakes
- 1–2 tablespoons olive oil (or avocado oil)
- 3 tablespoons flour
- 2 teaspoons lime juice
- ¾ cup cheddar jack cheese (shredded)
- Lime wedges
- Fresh cilantro (roughly chopped)
Instructions
- Season chicken breasts with Cajun seasoning and dredge in flour.
- In a skillet, heat olive oil over medium-high heat. Cook chicken until golden brown, about 6-7 minutes per side. Set aside.
- In the same skillet, melt butter and sauté garlic until fragrant. Add chicken broth, heavy cream, honey, hot sauce, brown sugar, mustard powder, oregano, cayenne pepper, and red pepper flakes; stir well.
- Incorporate diced tomatoes into the sauce and return the chicken to the skillet. Let simmer for about 5 minutes until heated through.
- Stir in lime juice and top with shredded cheese until melted.
