  • 2 boneless skinless chicken breasts (cut into 1-inch strips)
  • 1 tablespoon balsamic vinegar
  • 2 teaspoons olive oil
  • 4 garlic cloves (minced)
  • 1 teaspoon dried oregano
  • 3/4 teaspoon salt
  • 1/2 teaspoon ground pepper
  • 1 cup diced tomato
  • 4 whole basil leaves
  • 2 ounces fresh mozzarella (sliced)
  • Salt and pepper to taste

Instructions

  1. Preheat your grill to medium-high heat or oven to 400°F.
  2. In a mixing bowl, combine chicken strips, balsamic vinegar, olive oil, minced garlic, oregano, salt, and pepper. Mix well.
  3. Cut two pieces of heavy-duty foil into squares (12 inches each). Form an X by overlapping them.
  4. Place half the chicken mixture in the center of each foil piece. Top with whole basil leaves and diced tomatoes.
  5. Wrap the foil around the mixture tightly to seal.
  6. Cook on the grill for about 10 minutes per side or bake in the oven for approximately 10 minutes per side.
  7. Unwrap carefully; add mozzarella on top and wrap again until melted (about 5 minutes).
  8. Serve warm with additional sliced basil and seasoning.
