  • 1 tablespoon rice vinegar

  • 1 cup jasmine rice
  • 2 cups water (for rice)
  • 2 green onions, sliced

Instructions

  1. Cut chicken thighs into bite-sized pieces and season lightly with salt and pepper.
  2. In a bowl, mix soy sauce, sesame oil, garlic, ginger, and brown sugar. Add chicken to marinade and let sit for 10 minutes.
  3. Rinse jasmine rice under cold water until clear. Boil water in a saucepan, add rice, cover, and simmer for about 15 minutes.
  4. Heat oil in a large pot over medium-high heat. Sauté marinated chicken until caramelised (about 5-7 minutes).
  5. Pour in chicken broth and rice vinegar; bring to boil then reduce heat to simmer.
  6. Stir in cornstarch mixture slowly while stirring. Simmer for an additional 5 minutes.
  7. Adjust seasoning as needed before serving over jasmine rice and garnish with sliced green onions.
