  • 2 tsp vanilla extract
  • 3 ripe bananas, sliced thick
  • 1/2 cup brown sugar
  • 3 tbsp butter
  • 1/3 cup brown sugar (for the glaze)
  • 2 tbsp butter (for the glaze)
  • 2 tbsp dark vanilla extract (alcohol-free)
  • 1 tsp cornstarch (optional, for thickening)

Instructions

  1. Preheat oven to 350°F (175°C). Mix graham cracker crumbs, sugar, and melted butter; press into a springform pan and bake for 8 minutes.
  2. Lower oven to 325°F (163°C). Beat cream cheese until smooth. Gradually add sugar and eggs one at a time, followed by sour cream and vanilla.
  3. Pour cheesecake filling into crust and bake for 55-65 minutes until edges are set but center jiggles slightly. Cool in the oven with the door cracked for one hour.
  4. Chill in the fridge for at least 4 hours or overnight.
  5. In a skillet over medium heat, melt butter and brown sugar; add banana slices and cook until golden.
  6. For the glaze, melt butter with brown sugar in a saucepan; stir in dark vanilla extract and simmer.
  7. Top chilled cheesecake with caramelized bananas and drizzle with glaze before serving.
