Ingredients

Scale
  • 12 ounces fettuccine or linguine
  • 2 tablespoons olive oil
  • 2 medium leeks, thinly sliced
  • 8 ounces cremini mushrooms, sliced
  • 3 cloves garlic, minced
  • 1/2 cup vegetable stock
  • 1/2 cup heavy cream
  • 1 cup shredded Gruyere cheese
  • Salt and freshly ground black pepper to taste
  • Chopped fresh parsley for garnish (optional)

Instructions

  1. Cook the pasta in salted boiling water until al dente, reserving 1/2 cup pasta water before draining.
  2. In a skillet, heat olive oil over medium heat. Sauté leeks until soft and caramelized (5–7 minutes), then add mushrooms and cook until golden brown (about 5 minutes). Stir in minced garlic for another minute.
  3. Deglaze the skillet with broth, then stir in heavy cream, simmering until slightly thickened. Gradually add Gruyere cheese while stirring until melted.
  4. Toss the cooked pasta with the sauce, adding reserved pasta water as needed for creaminess. Season with salt and pepper to taste.
  5. Serve warm, garnished with fresh parsley if desired.
