  • ½ cup brown sugar
  • ¼ cup rice vinegar
  • ¼ cup hoisin sauce
  • 1 tablespoon ginger, minced
  • 1 tablespoon garlic, minced
  • 2 tablespoons sesame oil
  • 1 tablespoon chili paste (optional)
  • black pepper to taste
  • 2 green onions, chopped (for garnish)
  • sesame seeds (for garnish)

Instructions

  1. Rinse the beef short ribs under cold water and pat dry.
  2. In a large bowl, whisk together soy sauce, brown sugar, rice vinegar, hoisin sauce, ginger, garlic, sesame oil, chili paste (if using), and black pepper to make the marinade.
  3. Place the short ribs in a resealable bag or bowl; pour the marinade over them. Seal or cover and refrigerate for at least 2 hours (overnight is best).
  4. Preheat your oven to 325°F (160°C) and sear the marinated ribs in a skillet over medium-high heat until browned on all sides (about 3-4 minutes per side).
  5. Transfer the seared beef to a roasting pan, pour any remaining marinade on top, cover with aluminum foil, and roast for about 3-4 hours until fork-tender.
  6. In the last 30 minutes of cooking, remove the foil to allow for caramelization.
