  • 20 oz refrigerated or fresh cheese tortellini
  • 4 tbsp unsalted butter
  • 4 cloves garlic, minced
  • 1 cup all-purpose flour
  • 3 cups whole milk
  • 8 oz Velveeta cheese, cubed
  • 4 oz cream cheese, softened
  • 1 cup shredded mozzarella cheese
  • 1 cup grated Parmesan cheese
  • Fresh parsley or chopped chives for garnish

Instructions

  1. Bring a large pot of salted water to a boil. Cook the cheese tortellini according to package instructions until tender. Reserve 1 cup of pasta water, then drain and set aside.
  2. While the tortellini cooks, season the chicken with Cajun seasoning, garlic powder, smoked paprika, salt, and pepper. Toss to coat evenly.
  3. In a large skillet over medium-high heat, heat the olive oil. Add the seasoned chicken and sear for about 6-8 minutes, flipping occasionally until golden brown and cooked through. Transfer the chicken to a plate and set aside.
  4. In the same skillet, melt the butter over medium heat. Add minced garlic and sauté for about 1 minute until fragrant.
  5. Sprinkle in the flour and whisk for 1-2 minutes to form a light roux.
  6. Slowly pour in the milk while whisking constantly. Let this mixture simmer for about 3-5 minutes until slightly thickened.
  7. Lower the heat and stir in Velveeta cheese and cream cheese. Keep stirring until both are fully melted into a smooth sauce.
