  • 1 teaspoon salt (for dumplings)
  • 1 tablespoon fresh thyme (or 1 teaspoon dried thyme, optional, for dumplings)
  • 3/4 cup whole milk (for dumplings)
  • 4 tablespoons butter (melted, for dumplings)

Instructions

  1. In a heavy-bottomed pot, melt butter over medium-high heat. Add onion, carrots, and celery; cook for 5 minutes until softened. Stir in garlic and cook for another minute.
  2. Mix in flour to create a roux; cook for a minute before gradually adding evaporated milk and chicken stock. Stir continuously until thickened.
  3. If using raw chicken, add additional broth and simmer until cooked through (20 minutes); shred before returning to the pot. If using pre-cooked chicken, bring the mixture to a boil, then stir in chicken along with seasonings.
  4. Prepare dumplings by mixing flour, baking powder, salt, pepper, thyme, milk, and melted butter until just combined. Drop spoonfuls into the simmering broth and cover; cook for about 15 minutes.
