  • 2 cups white rice
  • 1 large onion, chopped
  • 2 cups low-sodium chicken broth
  • 2 cans cream of mushroom soup
  • 4 large bone-in, skin-on chicken thighs
  • 2 tablespoons melted butter
  • 2 teaspoons fresh thyme
  • 1 clove garlic, finely minced
  • Kosher salt, to taste
  • Freshly ground black pepper, to taste
  • 1 tablespoon freshly chopped parsley

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a 9″-x-13″ baking dish.
  2. In a mixing bowl, combine rinsed white rice, chopped onion, chicken broth, and cream of mushroom soup. Season with salt and pepper.
  3. Place chicken thighs on top of the rice mixture; brush with melted butter and sprinkle with thyme and garlic.
  4. Cover with foil and bake for 1 hour. Remove foil and bake for an additional 30 minutes until the chicken is golden brown and cooked through.
  5. Garnish with fresh parsley before serving.
