- 2 cups white rice
- 1 large onion, chopped
- 2 cups low-sodium chicken broth
- 2 cans cream of mushroom soup
- 4 large bone-in, skin-on chicken thighs
- 2 tablespoons melted butter
- 2 teaspoons fresh thyme
- 1 clove garlic, finely minced
- Kosher salt, to taste
- Freshly ground black pepper, to taste
- 1 tablespoon freshly chopped parsley
Instructions
- Preheat your oven to 350°F (175°C) and grease a 9″-x-13″ baking dish.
- In a mixing bowl, combine rinsed white rice, chopped onion, chicken broth, and cream of mushroom soup. Season with salt and pepper.
- Place chicken thighs on top of the rice mixture; brush with melted butter and sprinkle with thyme and garlic.
- Cover with foil and bake for 1 hour. Remove foil and bake for an additional 30 minutes until the chicken is golden brown and cooked through.
- Garnish with fresh parsley before serving.
