Ingredients

  • 2 slices sourdough or artisan bread
  • 1/2 ripe avocado, mashed
  • 1 tsp lemon juice
  • 1/2 cup cooked shredded chicken (grilled or rotisserie)
  • 2 slices cheddar or Monterey Jack cheese
  • 1 tbsp butter (for toasting)
  • Salt and pepper to taste

Instructions

  1. In a small bowl, mash the avocado with lemon juice and season with salt and pepper.
  2. If using mayonnaise, spread it on one side of each slice of bread. On the opposite side of one slice, spread the avocado mixture. Layer with shredded chicken and cheese before topping with the second slice of bread (mayo side out).
  3. Heat butter in a skillet over medium heat. Grill the sandwich for 3–4 minutes on each side until golden brown and cheese is melted, pressing down gently with a spatula.
  4. Remove from skillet, slice in half, and serve hot.
