Ingredients

  • 1 3/4 lbs boneless skinless chicken breasts
  • 1 lb grape tomatoes
  • 1 Tbsp olive oil
  • 1 (8 oz) package mozzarella balls (drained)
  • 2 cups fresh basil leaves
  • 3 Tbsp finely shredded parmesan cheese
  • 2 Tbsp pine nuts or chopped walnuts
  • 3 Tbsp balsamic glaze

Instructions

  1. Soak wooden skewers in water for at least 1 hour.
  2. Preheat grill to medium-high heat (425°F).
  3. Thread chicken pieces (4 per skewer) and tomatoes (3 per skewer) onto skewers.
  4. Brush with olive oil and season with salt and pepper.
  5. Grill skewers for 4-6 minutes per side until chicken reaches an internal temperature of 165°F.
  6. In a food processor, blend basil, parmesan, nuts, garlic, and olive oil to make pesto.
  7. Once cooked, add mozzarella balls to each end of the skewers and top with pesto and balsamic glaze before serving.
