  • 12 oz pasta (fettuccine or penne)
  • 1 lb boneless, skinless chicken breasts
  • 8 oz sliced mushrooms
  • 2 cloves minced garlic
  • ½ cup chicken broth
  • ½ cup chicken broth (substitute for Marsala apple vinegar)
  • 1 cup heavy cream
  • ½ cup grated Parmesan cheese
  • Fresh parsley for garnish
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • 1 teaspoon dried thyme

Instructions

  1. In a large pot, boil salted water and cook pasta until al dente. Drain and set aside.
  2. Heat olive oil in a skillet over medium heat. Season chicken with salt and pepper; cook until golden brown (5–7 minutes). Remove and set aside.
  3. In the same skillet, sauté mushrooms until browned (about 5 minutes). Add garlic and cook until fragrant (1 minute). Pour in chicken broth and additional chicken broth; simmer for 3 minutes.
  4. Lower the heat, stir in heavy cream, then add back the chicken along with Parmesan cheese and thyme. Mix well until heated through.
  5. Toss cooked pasta into the sauce until evenly coated. Garnish with fresh parsley before serving.
