  • 2 stalks lemongrass (white parts only)
  • 2 cloves garlic
  • 6 small shallots (or pearl onions)
  • 2 teaspoons turmeric powder
  • 1 teaspoon coriander powder
  • 1 teaspoon chili powder
  • 1/2 tablespoon salt (or more to taste)
  • 2 tablespoons sugar (or honey)
  • Cooking oil (for basting)

Instructions

  1. Cut the chicken into small cubes and set aside.
  2. Blend the marinade ingredients—lemongrass, garlic, shallots, turmeric, coriander, chili powder, salt, and sugar—in a food processor until smooth.
  3. Combine the chicken pieces with the marinade in a mixing bowl, ensuring all pieces are coated. Marinate in the fridge for at least 6 hours or overnight.
  4. Thread marinated chicken onto bamboo skewers.
  5. Preheat the grill over medium-high heat and grill each skewer for about 2-3 minutes on each side until fully cooked.
