  • 2 boneless skinless chicken breasts
  • 1 tablespoon olive oil
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • ½ teaspoon paprika
  • 3 tablespoons butter
  • 4 garlic cloves, minced
  • ½ cup chicken broth
  • 2 tablespoons lemon juice
  • 1 teaspoon lemon zest
  • 1 tablespoon chopped parsley
  • ½ teaspoon red pepper flakes (optional)

  • 1 cup white rice
  • 2 cups chicken broth
  • ½ cup freshly grated parmesan cheese
  • 1 tablespoon chopped parsley

Instructions

  1. Season chicken with salt, pepper, and paprika.
  2. In a large skillet, heat olive oil over medium heat and sear the chicken for 5–6 minutes on each side until golden brown. Remove from skillet.
  3. In the same skillet, melt butter, add minced garlic and sauté for 1–2 minutes. Pour in chicken broth and lemon juice; deglaze the pan.
  4. Add lemon zest and return the chicken to the skillet. Spoon sauce over chicken and simmer for another 2–3 minutes.
  5. Meanwhile, in a medium saucepan, melt butter over medium heat and sauté minced garlic until fragrant. Stir in rice and toast for about 1 minute before adding chicken broth.
  6. Bring to a boil then reduce heat to low; cover and simmer for 15 minutes. Stir in parmesan cheese and parsley once done.
  7. Serve chicken over garlic parmesan rice with additional sauce.
