Ingredients
- 2 Chicken breasts
- 1 cup Fresh parsley, chopped
- 4 cloves Garlic, minced
- ¼ cup Red apple vinegar
- ½ cup Olive oil
- ½ teaspoon Red pepper flakes
- 1 cup Mayonnaise
- ½ cup Sour cream or Greek yogurt
- 1 tablespoon Lemon juice
- 1 cup Diced tomatoes
- 2 cups Fresh greens (spinach or arugula)
- Salt and pepper to taste
Instructions
- Marinate the chicken by whisking together olive oil, minced garlic, parsley, vinegar, salt, and pepper in a mixing bowl. Ensure chicken is well coated and let it marinate for at least 30 minutes.
- Prepare the chimichurri sauce by blending parsley, garlic, red pepper flakes, vinegar, olive oil, and salt in a food processor until chunky.
- Make the garlic sauce by mixing mayonnaise, sour cream (or yogurt), lemon juice, minced garlic, and remaining herbs in a separate bowl; chill until ready to use.
- Preheat your grill or grill pan over medium-high heat and grill the marinated chicken for about 5–7 minutes on each side until cooked through.
