  • 1 cup unsalted butter, melted

  • 4 large eggs
  • 1 tsp vanilla extract

  • 1 tsp salt
  • 1 cup buttermilk, room temperature
  • 1 cup chopped pecans, lightly toasted
  • Optional: 2 tbsp granulated sugar + 1 tsp cinnamon for topping

Instructions

  1. Preheat your oven to 350F (175C) and prepare a greased and floured 9×5 inch loaf pan.
  2. In a large bowl, whisk melted butter and sugar until smooth. Add eggs one at a time followed by vanilla extract.
  3. In another bowl, combine flour, baking powder, baking soda, cinnamon, and salt. Gradually mix into the wet ingredients while alternating with buttermilk until just combined; fold in chopped pecans gently.
  4. Pour batter into the prepared loaf pan. If desired, sprinkle cinnamon sugar topping over the batter.
  5. Bake for 55-65 minutes or until a toothpick comes out clean. Cool for about 10-15 minutes before transferring to a wire rack.
