  • 1/3 cup light brown sugar
  • 1 teaspoon ground cinnamon
  • 2/3 cup white sugar
  • 1/2 cup softened butter
  • 2 eggs
  • 1 1/2 teaspoons vanilla extract
  • 1 1/2 cups all-purpose flour
  • 1 3/4 teaspoons baking powder
  • 1/2 cup milk
  • 2 apples, peeled and chopped

Instructions

  1. Preheat the oven to 350°F (175°C) and grease a 9×5-inch loaf pan.
  2. In a small bowl, combine light brown sugar and ground cinnamon; set aside.
  3. In a large mixing bowl, beat together white sugar and softened butter until creamy. Add eggs one at a time and mix well after each addition. Stir in vanilla extract.
  4. In another bowl, whisk together flour and baking powder. Gradually add to the creamed mixture alternately with milk until smooth.
  5. Pour half of the batter into the prepared pan, layer with half of the chopped apples and half of the cinnamon mixture. Repeat layers with remaining ingredients.
  6. Bake for 30 to 40 minutes or until a toothpick inserted comes out clean.
  7. Allow cooling for about 10 minutes before transferring to a wire rack.
