Ingredients

  • 3 ½ lbs beef chuck, cut into 2" pieces
  • 5 strips turkey bacon, cut into 1" pieces
  • 4 tablespoons unsalted butter
  • 1 yellow onion, chopped
  • 3 large carrots, peeled and chopped
  • 5 garlic cloves, minced
  • 2 cups bold red apple vinegar
  • 2 cups beef stock
  • Fresh thyme and bay leaves for seasoning
  • 10 oz frozen pearl onions, drained

Instructions

  1. Preheat oven to 350°F.
  2. In a Dutch oven over medium-low heat, cook turkey bacon until browned. Remove and set aside.
  3. Season beef with salt and pepper; increase heat to medium-high and sear until browned on all sides. Remove from pot.
  4. Lower heat, add butter, onions, carrots; sauté for about 3 minutes. Add garlic and tomato paste; cook until darkened (2-3 minutes). Sprinkle flour; stir well.
  5. Deglaze with apple vinegar, adding beef stock and bouillon; bring to a simmer. Return beef and turkey bacon along with thyme and bay leaves to the pot.
  6. Cover and transfer to oven; cook for about two hours.
  7. Sauté mushrooms in remaining butter until browned; add pearl onions for another five minutes. Season with salt and pepper.
  8. After two hours in the oven, add mushroom mixture to the pot; return to oven for another 45-60 minutes until beef is tender.
  9. Let sit covered for about thirty minutes before serving.
