Ingredients

  • 1 cup chopped pecans or almonds
  • 1 cup granulated sugar (200 grams)
  • 1 cup butter (226 grams)
  • 1/2 teaspoon salt
  • 1/4 cup water (60 ml)
  • 1 teaspoon vanilla
  • Chocolate chips for topping

Instructions

  1. Line a baking sheet with parchment paper.
  2. In a heavy-bottomed saucepan, combine butter, sugar, salt, water, and vanilla. Stir gently until mixed.
  3. Place over medium heat and stir continuously until boiling.
  4. Monitor temperature using a candy thermometer until it reaches 300°F (150°C).
  5. Remove from heat and stir in chopped nuts before pouring onto the prepared baking sheet.
  6. Allow to cool slightly, then sprinkle chocolate chips on top and spread evenly once melted.
  7. Garnish with additional nuts and flaked sea salt if desired. Cool completely before breaking into pieces.
