  • 2 carrots, diced
  • 2 celery stalks, diced
  • 1 medium onion, diced
  • 4 oz turkey strips, chopped
  • 3/4 cups ditalini pasta
  • 1 can cannellini beans
  • 4 cups chicken broth
  • 1 can whole plum tomatoes (28 oz)
  • 1 bag spinach, chopped
  • 2 tbsp olive oil

Instructions

  1. In a large pot, sauté turkey strips over medium heat until crispy (about 8 minutes). Add olive oil, carrots, celery, and onions; sauté for another 10 minutes.
  2. Create a well in the vegetables and caramelize the tomato paste for 3 minutes before mixing it in.
  3. Stir in crushed tomatoes, basil, bay leaves, and remaining seasonings. Bring to a simmer.
  4. Add chicken broth and parmesan rind; bring to a boil then reduce to simmer for 15 minutes.
  5. Incorporate cannellini beans and ditalini pasta; simmer for an additional 15 minutes until pasta is al dente.
  6. Add spinach and cover for about 3 minutes before serving.
