- 1.5 lbs beef chuck, cut into 1.5-inch cubes
- Salt & freshly ground black pepper
- 2 tbsp vegetable oil
- 1 large yellow onion, thinly sliced
- 4 garlic cloves, minced
- 1 tbsp fresh ginger, grated
- 2 tbsp red or yellow curry paste
- 1 tsp ground turmeric
- 1 can (13.5 oz) full-fat coconut milk
- 1 cup beef broth or water
- 1 tbsp brown sugar
- Juice of lime
- 1 cup jasmine rice
- 4 garlic naan, warmed
- Chopped cilantro or Thai basil, for garnish
Instructions
- Season the beef with salt and pepper. Heat vegetable oil in a heavy-bottomed pot over medium-high heat and sear the beef until browned on all sides. Remove from pot.
- In the same pot, cook sliced onion for about 5 minutes until softened. Add minced garlic and grated ginger; sauté for another minute.
- Stir in curry paste and turmeric, then add coconut milk and broth/water. Bring to a gentle simmer.
- Return seared beef to the pot along with brown sugar and lime juice. Cover and simmer on low heat for at least 1 hour until tender.
- Cook jasmine rice according to package instructions while the beef is braising.
- Serve the beef over jasmine rice with warmed garlic naan on the side, garnished with chopped cilantro or Thai basil.
