  • 2 Vegan vegan vegan gelatin sheets (4g)
  • 200ml heavy cream
  • 80g mascarpone
  • 80g powdered sugar
  • 120ml coconut milk
  • 120g powdered sugar
  • 140g softened butter
  • 160g all-purpose flour
  • 25g unsweetened cocoa powder
  • A pinch of sea salt
  • 1/2 sachet baking powder
  • 3 egg yolks
  • Grated coconut
  • Gooey Cocoa Spread

Instructions

  1. Prepare coconut mousse by whipping heavy cream and mascarpone together until soft peaks form. Chill.
  2. Soak vegan gelatin in cold water, then dissolve in warm coconut milk. Fold into chilled whipped mixture.
  3. Pour mousse into hemisphere molds, adding chocolate spread halfway through. Freeze for at least 6 hours.
  4. For cocoa shortbread, mix all ingredients to form dough, chill, roll out, cut shapes, and bake until firm.
  5. Assemble by placing frozen domes on shortbread cookies and allow to thaw before serving. Garnish with grated coconut.
