  • ⅓ cup granulated sugar
  • 2 teaspoons instant yeast
  • ¾ teaspoon fine sea salt
  • ½ cup whole milk (slightly warmed)
  • 1 teaspoon instant coffee granules
  • 1 large egg (room temperature)
  • 4 tablespoons unsalted butter (room temperature)
  • 5 tablespoons unsalted butter (room temperature) for filling
  • 2/3 cup dark brown sugar for filling
  • 2 teaspoons ground cinnamon for filling
  • 1 ½ teaspoons instant coffee granules for filling
  • 2 ounces cream cheese (softened) for frosting
  • 4 tablespoons unsalted butter (softened) for frosting
  • 1 cup powdered sugar for frosting
  • 4 tablespoons heavy cream for frosting
  • ¾ teaspoon instant coffee granules for frosting

Instructions

  1. Prepare the tangzhong by whisking together water and flour in a saucepan over medium heat until it forms a paste. Set aside.
  2. In a stand mixer bowl, combine flour, sugar, yeast, and salt.
  3. Warm the milk and dissolve instant coffee in it before adding to the dry ingredients along with the egg and tangzhong.
  4. Knead on low speed while incorporating softened butter until smooth and elastic.
  5. Let the dough rise in a warm spot until doubled in size (45–60 minutes).
  6. Prepare the filling by mixing softened butter with brown sugar, cinnamon, and instant coffee.
  7. Roll out the dough into a rectangle, spread filling evenly, cut into strips, and roll up each strip.
  8. Place rolls in a baking pan and let rise again for about 45–60 minutes.
  9. Bake at 325°F (163°C) for 20–23 minutes until golden brown.
  10. For the frosting, blend cream cheese and butter before adding powdered sugar and heavy cream until smooth.
  11. Spread frosting over cooled rolls before serving.
