  • ½ cup dried cranberries, chopped
  • 2 cloves garlic, minced
  • 1 tablespoon olive oil
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • 1 teaspoon dried thyme or 1 tablespoon fresh thyme
  • ½ cup chicken broth

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. In a skillet over medium heat, add olive oil and sauté garlic until fragrant. Stir in spinach and cook until wilted.
  3. In a mixing bowl, combine sautéed spinach with cranberries and brie cheese.
  4. Slice pockets into each chicken breast and fill them with the spinach mixture. Secure openings with toothpicks.
