- 2 Tbsp all-purpose flour (for coating blueberries)
- 2 cups fresh blueberries
- 1 cup butter (softened)
- 8 oz cream cheese (softened)
- 1 ½ cups sugar
- 1 ½ tsp vanilla extract
- 4 eggs
- 2 cups all-purpose flour
- 1 ½ tsp baking powder
- ½ tsp salt
Instructions
- Preheat your oven to 350°F (175°C).
- In a mixing bowl, toss blueberries with 2 Tbsp flour. Set aside.
- In a large bowl, cream together softened butter, cream cheese, sugar, and vanilla until light and fluffy.
- Add eggs one at a time, mixing well after each addition.
- In another bowl, combine remaining flour, baking powder, and salt. Gradually mix into the wet ingredients until just combined.
- Gently fold in the floured blueberries.
- Pour batter into greased loaf pans (9" x 5"). Bake for approximately 45 minutes or until a toothpick comes out clean.
- Allow to cool on a wire rack before serving.
