  • Salt and pepper to taste
  • 9 oz cheese tortellini (fresh or refrigerated)
  • 1 cup heavy cream
  • 4 oz Velveeta cheese, cubed
  • 1 cup shredded mozzarella cheese
  • ½ cup reserved pasta water (if needed)
  • Fresh parsley for garnish (optional)

Instructions

  1. Boil a large pot of salted water.
  2. Cook the tortellini according to package instructions until al dente. Reserve ½ cup of pasta water, then drain and set aside.
  3. Season both sides of the chicken with Cajun seasoning, Italian seasoning, salt, and pepper.
  4. Heat olive oil in a large skillet over medium-high heat. Add seasoned chicken pieces in a single layer.
  5. Sear for about 4-5 minutes per side until golden brown and cooked through. Transfer to a plate and cover loosely with foil.
  6. In the same skillet, reduce heat to medium. Add butter and minced garlic; sauté for about 30 seconds until fragrant.
  7. Pour in heavy cream; stir in Velveeta cubes until melted completely. Mix in shredded mozzarella and Parmesan cheese until smooth.
  8. Add cooked tortellini to the sauce, tossing gently to coat. If too thick, stir in reserved pasta water gradually until desired consistency is reached.
  9. Return cooked chicken to skillet, nestling beside tortellini. Simmer everything together for about 12 minutes to warm through.
  10. Garnish with fresh parsley if desired. Serve hot and enjoy this creamy delight!
