  • 1 jalapeno pepper (diced)
  • 3 cloves garlic (diced)
  • 1 tablespoon tomato paste
  • 1 can corn (drained)
  • 1 can diced tomatoes with green chilies (undrained)
  • 1 can black beans (drained and rinsed)
  • 5 cups chicken broth
  • 2 boneless skinless chicken breasts (or shredded chicken)
  • 1.5 cups cheddar cheese (shredded)
  • 1/3 cup cream cheese (softened)

Instructions

  1. In a large pot, melt the butter over medium heat. Sauté the diced onions and jalapenos for about 5–6 minutes until softened. Add garlic and cook for an additional minute.
  2. Stir in remaining ingredients except for cheddar cheese and cream cheese. Begin with about 2 tablespoons of taco seasoning.
  3. Bring the soup to a gentle simmer while partially covering the pot. Cook for approximately 20–25 minutes.
  4. Remove the chicken once cooked through, shred it with forks, then return it to the pot.
  5. Reduce heat to low and stir in cheddar cheese and cream cheese until melted and creamy.
  6. Taste and adjust seasonings as needed before serving hot.
