Ingredients

Scale
  • 1.5 lbs beef chuck, cut into bite-sized cubes
  • 1 tbsp coconut oil
  • 1 large onion, diced
  • 4 garlic cloves, minced
  • 1-inch piece of fresh ginger, grated
  • 2 tsp ground cumin
  • 2 tsp ground coriander
  • 1 tsp turmeric
  • 1 tsp smoked paprika
  • 1/2 tsp chili powder, adjust to taste
  • 1 tsp garam masala
  • 1 (14 oz) can chickpeas, drained and rinsed
  • 1 (14 oz) can diced tomatoes
  • 1 (14 oz) can full-fat coconut milk
  • Salt and pepper, to taste
  • Fresh cilantro, chopped (for garnish)
  • Juice of 1 lime
  • 2 cups all-purpose flour
  • 2 tsp baking powder
  • 1/2 tsp salt
  • 3/4 cup plain yogurt

Instructions

  1. Gather all your ingredients to ensure a smooth cooking process. Chop the vegetables and measure out spices ahead of time.
  2. In a heavy-bottomed pot, heat the coconut oil over medium heat. Add the diced onion and sauté until softened. Then add minced garlic and grated ginger; cook until fragrant.
  3. Stir in ground cumin, ground coriander, turmeric, smoked paprika, chili powder, and garam masala. Cook for another minute to bloom the spices.
  4. Add in the beef chunks, stirring to coat them with spices. Pour in diced tomatoes, chickpeas, and coconut milk. Season with salt and pepper. Bring to a simmer.
  5. Cover the pot partially and let it simmer on low heat for about 30-40 minutes until the beef is tender.
  6. In a mixing bowl, combine flour, baking powder, salt, and yogurt. Knead until you have a soft dough. Divide into small balls and roll into flat circles.
  7. Heat a skillet over medium-high heat. Cook each naan on one side until bubbles form; flip to cook through. Brush with melted butter or garlic-infused oil if desired.
  8. Once the curry has thickened to your liking, stir in lime juice before serving. Garnish with fresh cilantro. Pair it with warm garlic naan for an unforgettable meal!
