  • 1 lb boneless, skinless chicken breasts
  • 8 oz penne pasta
  • 2 tbsp olive oil
  • 2 tbsp unsalted butter
  • 1 tbsp minced garlic
  • 1 cup heavy cream
  • 1 cup Velveeta cheese, cubed
  • 1 cup shredded mozzarella cheese
  • 1 cup freshly grated Parmesan cheese
  • Cajun seasoning, paprika, salt, and pepper to taste

Instructions

  1. Cook the penne pasta according to package directions until al dente. Drain and set aside, reserving some pasta water.
  2. Season chicken strips with Cajun seasoning, paprika, salt, and pepper. In a skillet, heat olive oil over medium-high heat. Cook the chicken until golden-brown (about 4-5 minutes per side) and set aside.
  3. In the same skillet, lower the heat and add butter and minced garlic. Stir until fragrant (about 30 seconds). Add heavy cream and stir until warm.
  4. Mix in Velveeta until melted; then add mozzarella and Parmesan cheeses until thickened. If too thick, gradually add reserved pasta water for desired consistency.
  5. Stir in cooked penne until fully coated. Return chicken to the pan or serve alongside pasta.
