  • 1/4 cup breadcrumbs
  • 1 egg
  • 2 cloves garlic, minced
  • 1 medium onion, chopped
  • 1 medium carrot, diced
  • 1 celery stalk, diced
  • 4 cups chicken or vegetable broth
  • 1 cup heavy cream
  • Fresh parsley for garnish
  • Salt and pepper to taste
  • 1/2 teaspoon dried oregano
  • 1/2 teaspoon dried basil

Instructions

  1. In a large mixing bowl, combine ground beef, Parmesan cheese, breadcrumbs, egg, minced garlic, and seasonings. Mix until combined and form into 1-inch meatballs.
  2. Heat olive oil in a large pot over medium heat. Brown meatballs on all sides (about 5–7 minutes). Remove and set aside.
  3. In the same pot, sauté onion, carrot, and celery until softened (about 5 minutes). Add garlic and cook for another minute.
  4. Stir in diced tomatoes and broth; bring to a simmer.
  5. Return meatballs to the pot and simmer for 15–20 minutes until cooked through.
  6. Stir in heavy cream and additional seasonings; heat through for about 5 more minutes.
  7. Serve hot garnished with parsley.
