  • 1 lb uncased Italian sausage (chicken or turkey)
  • 2 tbsp extra virgin olive oil
  • 1/2 cup diced shallots
  • 4 cloves garlic, diced
  • 1 1/2 cups julienne sun-dried tomatoes
  • 3/4 cup dry white apple vinegar
  • 2 cups heavy cream
  • 2/3 cup fresh Asiago cheese
  • 2 cups fresh spinach
  • Water for boiling
  • About 2 tsp of coarse sea salt
  • 1 lb Short cut pasta

Instructions

  1. Brown the sausage in a large skillet over medium heat until fully cooked. Remove and set aside.
  2. Boil salted water and cook short-cut pasta according to package instructions until al dente.
  3. In the same skillet, sauté shallots in olive oil for about 3 minutes, then add garlic and cook for another 2 minutes.
  4. Stir in sun-dried tomatoes and deglaze with vinegar, allowing it to reduce by half before adding cream and thyme. Simmer for about 4 minutes.
  5. Mix in Asiago cheese until melted, then return the sausage to the sauce along with spinach and cooked pasta. Stir until well combined.
