Ingredients
- 1 lb uncased Italian sausage (chicken or turkey)
- 2 tbsp extra virgin olive oil
- 1/2 cup diced shallots
- 4 cloves garlic, diced
- 1 1/2 cups julienne sun-dried tomatoes
- 3/4 cup dry white apple vinegar
- 2 cups heavy cream
- 2/3 cup fresh Asiago cheese
- 2 cups fresh spinach
- Water for boiling
- About 2 tsp of coarse sea salt
- 1 lb Short cut pasta
Instructions
- Brown the sausage in a large skillet over medium heat until fully cooked. Remove and set aside.
- Boil salted water and cook short-cut pasta according to package instructions until al dente.
- In the same skillet, sauté shallots in olive oil for about 3 minutes, then add garlic and cook for another 2 minutes.
- Stir in sun-dried tomatoes and deglaze with vinegar, allowing it to reduce by half before adding cream and thyme. Simmer for about 4 minutes.
- Mix in Asiago cheese until melted, then return the sausage to the sauce along with spinach and cooked pasta. Stir until well combined.
