- 1 pound twisted pasta (rotini or fusilli)
- 2 boneless, skinless chicken breasts, cubed
- 2 tablespoons olive oil
- 4 cloves garlic, minced
- 1/2 cup unsalted butter
- 1/4 cup all-purpose flour
- 3 cups whole milk
- 1 cup heavy cream
- 1 1/2 cups shredded mozzarella cheese
- 1/2 cup grated Parmesan cheese
- 1 tablespoon Cajun seasoning
- 1 teaspoon paprika
- 1/4 teaspoon salt
- 1/4 teaspoon black pepper
- 1/4 cup chopped fresh chives
Instructions
- Cook the pasta according to package directions until al dente. Drain and set aside.
- In a large bowl, toss the chicken cubes with olive oil, Cajun seasoning, and paprika until evenly coated.
- Heat a large skillet over medium-high heat. Add the chicken and cook for 6-8 minutes or until golden brown and cooked through. Remove the chicken from the skillet and set aside.
- In the same skillet, melt the butter over medium heat. Add minced garlic and cook for 1 minute or until fragrant.
- Whisk in flour and cook for 1-2 minutes while stirring constantly until a smooth paste forms.
- Gradually whisk in milk and heavy cream until smooth. Bring to a simmer while stirring occasionally.
- Reduce heat to low and simmer for 5-7 minutes or until slightly thickened.
- Stir in 1 cup of mozzarella cheese and Parmesan cheese until melted and smooth. Season with salt and pepper to taste.
- Add cooked pasta and chicken to the sauce; toss to coat evenly.
- Transfer pasta to a serving dish. Top with remaining ½ cup of mozzarella cheese.
- Broil in oven for 2-3 minutes or until cheese is melted and bubbly.
- Garnish with chopped fresh chives and serve immediately.
