  • 300g boneless chicken breast
  • 1 tbsp olive oil
  • 1 onion, finely chopped
  • 1 red bell pepper, sliced
  • 2 cloves garlic, minced
  • 150ml chicken broth
  • 150ml heavy cream
  • 1 cup basmati rice
  • 1 tbsp butter
  • 1 tsp smoked paprika
  • 1 tsp sweet paprika
  • Salt & pepper

Instructions

  1. Cook basmati rice in salted water according to package instructions; set aside.
  2. Season chicken with smoked paprika, salt, and pepper.
  3. In a non-stick skillet, heat olive oil over medium heat. Brown the seasoned chicken on all sides; remove and set aside.
  4. In the same skillet, melt butter and sauté onion, bell pepper, and garlic until softened.
  5. Stir in smoked and sweet paprika with tomato paste; add chicken broth and simmer for a few minutes.
  6. Pour in heavy cream, return chicken to skillet, and cook until sauce thickens.
  7. Serve hot over fluffy rice.
