  • 4 boneless skinless chicken breasts
  • 1 cup long-grain white rice
  • 2 cups chicken broth
  • 2 tbsp unsalted butter
  • 1½ cups whole milk
  • ½ cup shredded cheddar cheese
  • ½ cup grated Parmesan cheese
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1 tsp smoked paprika
  • ½ tsp dried thyme
  • Salt and pepper to taste
  • Fresh parsley chopped for garnish

Instructions

  1. Season the chicken breasts with garlic powder, onion powder, smoked paprika, salt, and pepper. In a skillet over medium heat, cook until golden brown (5-7 minutes per side). Remove and set aside.
  2. In the same skillet, add rice and toast for about a minute. Pour in chicken broth and salt; bring to a boil. Cover and simmer for 18-20 minutes until rice is tender.
  3. For the sauce, melt butter in a saucepan over medium heat. Stir in flour to create a roux; then whisk in milk and chicken broth until smooth. Add spices and cheeses until melted.
  4. Return chicken to the skillet on top of rice; pour sauce over everything. Cover and simmer for another 5 minutes.
  5. Garnish with chopped parsley before serving warm.
