- 4 boneless skinless chicken breasts
- 1 cup long-grain white rice
- 2 cups chicken broth
- 2 tbsp unsalted butter
- 1½ cups whole milk
- ½ cup shredded cheddar cheese
- ½ cup grated Parmesan cheese
- 1 tsp garlic powder
- 1 tsp onion powder
- 1 tsp smoked paprika
- ½ tsp dried thyme
- Salt and pepper to taste
- Fresh parsley chopped for garnish
Instructions
- Season the chicken breasts with garlic powder, onion powder, smoked paprika, salt, and pepper. In a skillet over medium heat, cook until golden brown (5-7 minutes per side). Remove and set aside.
- In the same skillet, add rice and toast for about a minute. Pour in chicken broth and salt; bring to a boil. Cover and simmer for 18-20 minutes until rice is tender.
- For the sauce, melt butter in a saucepan over medium heat. Stir in flour to create a roux; then whisk in milk and chicken broth until smooth. Add spices and cheeses until melted.
- Return chicken to the skillet on top of rice; pour sauce over everything. Cover and simmer for another 5 minutes.
